Chicken Noodle Soup for this kind of weather



Last night I made the best chicken noodle soup you can dream of in winter. It is really easy, only needs plenty of time to boil while you watch tv, read or surf the web. You will feed your entire family, from young to old, and they will all THANK YOU! It is a fat-free healthy meal which contains vegetables, legumes, lean protein and grains. You will also have leftovers to make chicken croquettes, which your children will absolutely love ( I will post this recipe later).





CHICKEN NOODLE SOUP RECIPE

1 chicken cut up in 8 pieces
2 lbs of beef bones
2 stalks of celery
3 carrots
1 lb of chickpeas

4 handfuls of noodles

Wash the chickpeas and soak in lukewarm water overnight.  In a 10 quarts pot put all the ingredients (except the 2 chicken breasts) and 6 quarts of water and bring to a boil.  Let it boil for at least 2 hours at medium heat; add the chicken breasts and let it boil for another 20 to 30 minutes.
Let it cool down and strain the broth. Reserve the chicken breasts, chickpeas and carrots.

In a smaller pot put two cups of broth and stir the noodles in when it comes to a boil. Add salt to taste. Let the noodles simmer in the broth following the package instructions for the time.

Chop some of the chicken and carrots in a bowl and add some chickpeas.  Add the broth and noodles.
Ready to eat! Enjoy!

These are the noodles I use, they need to simmer for 13 minutes.
